In Native American folklore, blueberries are called “star berries’ because the blossom at the end of the blueberry make a perfect five pointed star. Blueberries along with leaves and roots were also used for healing purposes. They were dried in the sun and used for soups, stews and also rubbed onto meats to preserve them. Native Americans created a blueberry baked dessert called Saututhig (say ‘sawi-taw-teeg’), a simple pudding made with blueberries, cracked corn and water. Try this Blueberry Slump (cobbler) recipe, which may be related to the traditional Native American Saututhig
What you need:
measuring cups medium cooking spoon
measuring spoons 1 small metal scooper or tablespoon
small grater or zest knife medium skillet with cover
medium bowl serving bowls and spoons
Ingredients: Dumplings Ingredients: Blueberry Filling
2 ¼ c. baking mix or make your own* 24 oz. frozen blueberries
1 c. milk or milk substitute of your choice ¾ c. sugar
1 tbsp. sugar 1 tsp. pumpkin pie spice or cinnamon
2 tbsp. melted butter or oil 1 c. orange juice
1 ½ tsp. lemon juice (optional)
1 tsp. lemon peel zest (optional)
What to do:
1. Combine baking mix, milk, sugar and melted butter or oil in bowl. Gently stir, do not
overmix. Set aside.
2. Put blueberries, ¾ c. sugar, spice, orange juice, lemon juice (if desired) and lemon zest (if
desired) in skillet. Bring to boil. Then reduce heat to low. Using scooper or tablespoon,
scoop up 2 inch dumpling balls into blueberry mixture. Cover pan and simmer for 25
minutes. Do not lift cover until 25 minute mark.
3. Makes 8 servings (1cup each). Serve with scoop of ice cream or whip cream. Enjoy!
