INGREDIENTS:
1 cup All-purpose flour
1 cup Whole-wheat flour
2 tsp Baking powder
2 tsp Baking soda
1 tsp Cinnamon
½ tsp Nutmeg
½ tsp Allspice
1lb Sweet potatoes
½ cup Brown sugar
2 Eggs
1 cup Orange juice
1 Carrot, shredded
1 tsp Vanilla
ADDITIONAL INFORMATION:
• Preparation time: 20 minutes
• Cooking time: 20 minutes
• Makes: 16-18 Muffins
DIRECTIONS:
1 Preheat oven to 400°F.
2 Combine flours, baking powder,
baking soda, cinnamon, nutmeg
and all spice, stir till smooth.
3 Combine mashed sweet
potatoes, brown sugar, eggs,
orange juice, carrots and Vanilla
in a large mixing bowl.
4 Combine with flour mixture.
5 Spray a muffin tin with non
stick-spray; fill each cup ¾ full
with batter.
6 Bake 15-20 minutes or until
lightly browned, cool and
remove from pan.
